As for technical details, matte is the norm these days, gloss can show finger prints easier, but gloss has more zing, especially for more contrasty images, and deep blacks.  I expect they print in sRGB, but a nicely white balanced AdobeRGB file will print accurately.
Do any image corrections at home, where you control the details, which should include white balance, sharpening (just enough to notice, not too strong), contrast and cropping.  Turnaround time should be a matter of hours only, the larger the image taking more time.

Getting good quality prints, reliably means knowing the system, testing it before a big batch, (and it's limitations) and following the same procedures each time.
